it was printed in 1626 in North America and was apparentl circulated in the colonies, someone sent me a recipe out of it that Im going to make, its the oldest jerky recipe Ihave seen, it was sent to me by one of our customers, here is the recipe and Im trying it out this week.

To mayke a chirquoy that is very goode take the first, i pynte of first beere and warme yt yet not to seethe so thy touch may bare yt. Put into a mortar a halfe an ounce of gynger that is cut small, an equall measure of candyd sugar, of cumin and cinamine in equal measure a farthing ounce. Pownder them very well until they are together as lime paste.
Take then yower beere still warme and cast thereto yower paste stirryng him right well. Set yower pot upon a soft fyre agayn until yower liquore hath lost but a halfe of itself but allow yt not to seethe but to steeme softly and put yt to cool for a nyght.
Put to yower liquore as much beefe as will not come above the liquore and steep him right well for three or fower daise then when it is done prepare youwer chirquoy as you have beene showed.
