While digging around in books, I've come across mention of a knight by the name of Middleton (no Christian name given) in North Yorkshire, in a roll dating from Henry VI (so mid to late 15th C). I'm trying to find out a bit more about him. So far I've identified 2 Middleton families associated with Middleham Castle, the Middletons of Middleton Hall in Westmoreland and the Middletons of Stockeld in Richmondshire (North Yorkshire).
So far my attempts to find out more about these two families have yielded little success. I suspect that the knight who stared my search is Sir Peter (or Piers) Middleton of Stockeld, but I can't even be confident about that.
Can anyone give me some good directions to investigate further?

Have you looked into any relation to Sir John Middleton? He fought in the Burgundian Wars as commander of the 21st Company, and was present at Bosworth.

I know that Sir Robert Middleton fought for Richard at Bosworth and Stoke. I think that he was from the Westmoreland Middletons.
