Herts Specialist Fabrics sell a variety of wool and linen (and it comes in amazing cloth bags too!) and will send samples to you so that you can check the weight / colour. I have some lovely linen that I made an underkirtle out of and bought some 'medieval' wool from them that I used for an overkirt...
