Apparently, except for knight which I hear comes from the Saxon word (Chnikt?) for servant.

Indigo

Indigo was not used until the late 1500's (I think) so using woad for the period I do is a safer bet. I believe that Elizabeth the first outlawed the growing of woad as it leeched a lot of the nutrients from the soil and left very poor crops if they were planted after in the same field.

linen and dyeing

I have found that it is hard to dye white linen with natural dyes. I dunno if it's to do with the coarseness of the cloth (it may work better on a finer weave) but the coarser materials I find the dye just wont take.

Dyeing with madder

Well my first attempt at dyeing with madder wasn't too much of a disaster! I managed to achieve what I would call clown fish red (well it's a very orangy colour) I used alum, tin and cream of tartar as a mordant on some of the wool and tin and cream of tartar on the rest and I must say the futures ...

Pink

As francis rightly said depending on temperature madder will give several shades of pink as well as red. Other plant's will also give pinks including blaeberries, brambles and elder I believe. :)
