The Seven Chocolate Cheesecake

As everybody knows, chocolate is the fifth basic food group... some would argue it is the first and, perhaps the only one that really counts. In any case... the following recipe (and, no... it isnít period... in fact... it ainít even "period adaptive"...) might make a rather tasty addition to a desert revel... so far the reviews have been rather positive...


5 Whole graham crackers, broken into pieces
1/4 cup sugar
Ĺ of a bag of a 1 lb. bag (or Ĺ lb.!!) of Oreo Cookies, de-stuffed
6 Tablespoons of butter (unsalted)


1 Ĺ lb.Cream cheese, room temperature
1 Cup sugar
4 Oz. Unsweetened bakers chocolate (the best you can get)
3 Large eggs
2 Tablespoons butter
a handfull or so of white chocolate chips


1 Ĺ Cups sour cream
1/4 Cup powdered sugar
1 Ĺ Ounces of imported white chocolate (grated)
1 Cup of Girhardelli's sweet chocolate powder
16 Hershey's kisses
some really good chocolate ice cream topping

For the Crust:

Preheat oven to 325 degrees. Lightly butter a 9" springform pan with 2 1/4" sides. Finely grind grahm crackers, Oreo cookies and sugar in a food processor. Add butter and blend using off/on pulses. Press crumbs into bottom and 2" up the sides of the prepared pan. Refrigerate 20 minutes.

For the Filling:

Put cream cheese, sugar, eggs and butter into food processor (or mixer with whip) and blend until very smooth. Grate baker's chocolate (very fine) into the mix. Blend until smooth. Add white chocolate chips and mix in with a spoon.

Transfer filling to crust lined pan. Bake until edges of filling are puffed and dry looking and center is just set, about 50 minutes. Cool on rack then transfer to refrigerator.

For Topping:

Mix sour cream, powdered sugar and chocolate powder in a small bowl and whip until very smooth. Spread topping onto cooled cake. Place Hershey's kisses, evenly spaced, around the outside edge of the cheese cake... this will help mark where slice should be cut.... Grate white chocolate over the top of the cake and then drizzle ice cream topping over the white chocolate. Refrigerate until well chilled (about 6 hours). Serves 16.
