It's a terrible waste I know, but I was looking at my bottle of homemade mead as I was pouring it and thinking - can I cook with this?

Any ideas?

Course you can cook with mead - dry one for savoury - just like wine -sweet for desserts.

Try using some mead in with orange or cranberrrys or ginger with duck - it is also good in a sweet and sour sauce lovely with apricots for a twist on bread and butter pudding again with orange for crepe suzette or the like. Soak dried fruit in it before putting into a fruitcake - mead ice cream is good too.

Just let your imagination wander and experiment

Yeh - it's basically a wine, albeit a strong one, so thought similar rules would apply. My mead - and it's my first go - is a bit weedy taste wise for cooking. I may have crack when I either get some moniac or make more robust HB.

Are there any C15 recipes for it?

Found this site - looks like there are some very interesting recipes - Hey martin there is even one called capsicumel - made with honey and chilli http://www.solorb.com/mead/


We have made brews before with both spices and fruits - also did a batch with rose petals

My experiance of mead is that it definitly matures in flavour over time. Non of our home made has been even worth looking at let alone drinking if it is under a year / year and a half old.

As for cooking I have marinaded pork and chicken in mead with great sucsess.
I have also got a pear in pastry recipe which uses mead to part cook the pears in before putting them in the cases... a very fine desert.
